Surf & Turf – a flavorful combination

Today, “Surf & Turf” represents the success of a long-standing union—though not one between people, but rather a delicious fusion of succulent beef steak and the finest seafood, such as shrimp or lobster. In this article, we take a closer look at the origins and evolution of this magnificent fusion dish, which has since become an indispensable fixture in European cuisine as well.

A creation born of fusion

Let us travel back to 1961 in Los Angeles. The film “West Side Story” is released and takes the world by storm. Yet, alongside these major cinematic productions, another popular creation emerges in the “City of Angels” – within the Hollywood studios, but in a different kind of hotspot: the city’s kitchens and restaurants. “Surf & Turf – Australian Lobster Tail & Choice Top Sirloin Steak” appeared in an advertisement in the “Los Angeles Times” – the first known mention of the term “Surf & Turf.”

At the time, combining seafood with beef was a novel culinary experiment, its potential for success far from certain. While some conservative critics dismissed the experience as “culinary kitsch,” the rapidly growing public demand left no doubt that this new combination was here to stay. The dish spread quickly across North America and reached the east coast of Australia, where—in a nod to the magnificent Great Barrier Reef – it is known as “Reef and Beef.” This variation in naming highlights a creativity that is also reflected in the diverse ways this versatile specialty is prepared, depending on the region.

Evolving over time

In its original 1960s iteration, Surf & Turf consisted of a fillet steak served with half a lobster tail. Over the decades, however, this combination of succulent beef and the delicious meat of fresh shellfish has continued to evolve, still surprising diners today with new concepts and refreshing culinary experiments. Variations featuring mussels, black tiger prawns or scampi have come to replace the lobster and because the seafood can be prepared steamed, pan-fried, deep-fried or grilled, the experience – both in its preparation and consumption – remains as exciting as ever.
