Anleitungen
  1. Für die Thymian-Mayonnaise die Mayonnaise mit den Thymianblättchen mischen, mit einem Schuss Olivenöl strecken und mit Salz und Pfeffer abschmecken.
  2. Für die Chorizo-Marmelade die Chorizo halbieren, häuten und in sehr kleine Stücke schneiden. Zwiebel und Knoblauch schälen und klein hacken. Chorizo in einer Pfanne ohne Fett wenige Minuten braten, bis sie an den Ecken beginnt knusprig zu werden. Aus der Pfanne nehmen und zur Seite stellen. Hitze reduzieren und Zwiebel im verbleibenden Chorizo-Fett langsam schmoren, bis er weich ist und leicht braun wird. Knoblauch hinzufügen und kurz mitrösten. Mit Rotweinessig ablöschen, Zucker und Chorizo hinzügen und ein paar Minuten schmoren, bis sich der Zucker aufgelöst hat und eine klebrige Masse entsteht.
  3. Für die Shrimps-Patties Shrimps grob hacken und mit 6 EL Semmelbrösel, Dijonsenf, Mayonnaise, Ei, Salz und Pfeffer mischen. Die Masse sollte eine matschige Konsistenz haben und sich formen lassen. Bei Bedarf noch etwas mehr Semmelbrösel hinzufügen. Öl in einer Pfanne erhitzen. Aus der Shrimps-Masse 4 Laibchen formen und auf jeder Seite 2 Minuten goldbraun braten, dabei nur einmal wenden. Burger Buns halbieren und mit Vogerlsalat belegen. Fertig gebratene Shrimps-Patties auf den Vogerlsalat legen, zuerst mit Thymian-Mayonnaise, dann mit Chorizo-Marmelade belegen. Burger Bun Deckel obenauf drapieren und servieren.
