Für die Ingwer-Knoblauch-Sojasauce:
Anleitungen
  1. Ingwer-Knoblauch-Sojasauce: Roten Zwiebel ganz fein würfelig schneiden, frischen Ingwer ebenfalls, Knoblauch ebenfalls. Öl in Topf erhitzen, den Zwiebel hinzufügen und anrösten. Den Zucker hinzufügen und zergehen lassen, dann etwas Tomatenmark (ein Kaffeelöffel) hinzufügen und kräftig durchrühren. Wenn es leicht braun wird mit Balsamicoessig ablöschen (ein halbes Stamperl), dann gleich etwas Wasser hinzufügen (auch ein halbes Stamperl), anschließend den Ingwer und Knoblauch hinzufügen und mit Sojasauce und Wasser aufgießen, einige Minuten einkochen lassen und von der Herdplatte nehmen. Mindestens 2 Stunden durchziehen lassen.
  2. Garnelen mit Etwas Meesalz, Akazie, Sand-Strohblume, Melisse, wilde Malve, Lavendel würzen.
  3. Sojasprossen waschen, die Karotten in feine Streifen schneiden, Zwiebel ganz dünn blättrig schneiden (also keine kleinen Würfel). Eine Wokpfanne mit 2-3 EL Öl erhitzen, 2 Kaffeelöffel Zucker dazu, Sojasprossen hineingeben und durchmischen, mit Hersperidenessig ablöschen (2 Esslöffel), etwas Salz dazu, danach mit 2-3 EL-Sojasauce ablöschen und nur so lange braten bis die Sojasprossen glasig werden und noch knackig sind. Über einem Rost in ein Sieb gießen und abtropfen lassen. Dann in eine Schüssel leeren und die heiße Flüssigkeit abgießen, damit er nicht mehr nachzieht.
  4. Den roten Zwiebel und die Karotten hinzufügen, damit sie durch die warmen Sojasprossen etwas garen. Mango und Papaya erst untermischen, wenn der Salat schon fast kalt ist.Etwas der Knoblauch-Ingwer-Sojasauce darüber geben.
  5. Garnelen kurz von jeder Seite anbraten. Zum Schluss den Salat nochmal mit Essig, Mangosaft, etwas Limettensaft, Zucker, Chilisalz & Sesamöl marinieren und mit den Garnelen servieren.
