Für die Garnelen-Zitronengras-Spieße
Für den Mangosalat
Anleitungen
  1. Für den Mangosalat: Die Mangos schälen und in feinen Spalten vom Kern schneiden. Die Cashewkerne grob hacken und untermengen. Die Knoblauchzehe schälen, fein hacken und ebenso untermengen. Die Chilischote waschen, halbieren, die Kerne entfernen und in feine Streifen schneiden. Die Zitrone auspressen. Minze und den Koriander waschen, trocken schütteln und die Blättchen von den Stielen zupfen und etwas zerzupfen. Alle Salatzutaten in einer Schüssel miteinander vermengen, abschmecken und in Schälchen anrichten.
  2. Für die Garnelen-Spieße: Den Knoblauch schälen und fein hacken. Die Limettenschale in feinen Streifen abreiben. Die Chili längs aufschneiden, entkernen und fein hacken. Alle Zutaten mit 2 EL Öl verrühren. Die Garnelen schälen und für ca. 1 Stunde mit dem Würzöl marinieren.
  3. Die Zitronengrasstängel halbieren. Jede Garnele mit einem spitzen Messer in der Mitte vorsichtig durchbohren. Auf jeden Zitronengrasstängel eine Garnele stecken.
  4. Eine Pfanne erhitzen, die Zitronengrasstängel mit Öl einpinseln. Die Garnelenspieße bei mittlerer Hitze von jeder Seite 2-3 Min. braten. Leicht salzen und herausnehmen. Zusammen mit dem Mangosalat servieren.
