Anleitungen
  1. Die Kabeljau Filets im Kühlschrank ca. 12 Stunden auftauen. Bei Raumtemperatur 2-4 Stunden oder rascher, in ausreichend lauwarmes Salzwasser (20g Salz (=2 EL) pro Liter Wasser) für ca. 5-10 Minuten einlegen.
  2. Die Pappardelle in Salzwasser al-dente kochen.
  3. Die Eierschwammerl putzen und vierteln. Zwiebel und Knoblauch fein hacken und in etwas Olivenöl anschwitzen, die Eierschwammerl hinzufügen. Wenn die Eierschwammerl fertig gegart sind mit 200 ml Schlagobers verfeinern. Abschließend die fertigen Pappardelle beimengen.
  4. Die Pinienkerne anrösten und beiseitestellen.
  5. Die Kabeljau Filets bei mittlerer Hitze mit etwas Öl für ca. 3 - 3 ½ Minuten pro Seite braten.
  6. Das restliche Schlagobers in einem hohen Gefäß solange mit dem Stabmixer mixen, bis ein herrlich leichter Schaum entsteht.
  7. Serviervorschlag: Die Pasta auf einem großen Teller anrichten, das Kabeljau Filet darauf legen und mit dem Obersschaum garnieren. Die Pinienkerne und gehackte Petersilie über das Gericht streuen und servieren. Wir wünschen guten Appetit!
